Caster sugar is obtained by sieving crystal sugar. Its particle size is very fine and regular.


Caster sugar’s best use is in the products that need a specific size grain.

Crystal sugar is obtained by purifying, evaporating and then the crystallizing of the diffusion juice resulting from the beet or the cane sugar.

This sugar fits to almost any production of sugar confectioned products.

This is a crystalized sugar made from beet. The fine crystals obtained from a first sieving are then sieve again to obtain a homogenous size of crystal and no fine-crystals.

This sugar has a homogenous size repartition, so it is perfect for manufacturing process that is sensitive to particles size (no fine crystals). More over, it can dissolve instantly.

It is also perfectly adapted for :

- Powder mixture. For example, it can be used for dehydrated cream dessert or dehydrated cake mix.

- For sugar-coating or any cooked coating

The grain size is 0,3 mm.

This is a crystalized sugar made from beet. It is then sieved to obtain a homogenous size of crystal. As it is sieved; this sugar can fit perfectly weel to manufacturing process sensitive to presence of fine crystals.

Its other applications are the following :

It is used as decoration for cakes or other pastries. The crystal size is a little smaller than calibrated size 2000 and calibrated 1350. As it has a homogenous size repartition, this sugar is perfect to make powder mixes such as vanilla sugar or dehydrated culinary preparation (soup, salsa...)

It is perfect to bring a crusty and crunchy texture texture to pastry and dough.

The grain size is 0,8 mm.

The calibrate size 2000 sugar is obtained from sieving crystal sugar.

The grain size is about 1.5 to 3 mm (is bigger than the cristal sugar grain size)

It main feature is that is has big white crystals that could resist better to oven heat while keepping their aesthetic aspect.

It is convenient to decorate confectionery, cakes and other kind of special pastries.

It is also use to make cotton candy and colored sugar.

The calibrate size 1350 sugar is obtained by sieving crystallized sugar.

Another large crystal sugar, sanding sugar, its main feature is the grain size is between 1.1 and 1.6 mm

Is used mainly in the baking and confectionery industries as a sprinkle on top of baked goods.

It is used to give spécial textures and presentations : large crystals reflect light and give the product a sparkling appearance.

There are not fine particules and its easy flowing.

Its overall used in beverages : the obtained mixture, even at cold temperatures, is uniform. Its also used for the making of :

- Lemonades

- cotton candy

- Liquors

- Syrups

The big grains 750 is a crystalized sugar made from beet. It has big crystals.

It is not really used in pastries, more in beverages, "viennoiseries", breadmaking...

 

The grain size is 0,75 mm.
