Organic light sugar cane is mainly imported from South America. We work with several sugar mills locallized in Brazil, Argentina, Paraguay, Colombia but also from the Antilles. The harvest period is normally between June ad November.

Since then, fields are cleaned, plowed and gathered from last year plant cuttings. Cane plants are changed every 5 years.

Sugar is light, its colour is between 600 and 1000 ICUMSA.

This is the organic sugar mostly produced around the world. Indeed, its light colour and unobtrusive flavor does little modify the normal features of the final product.

The light colour is obtained by an important washing at centrifugation time. It has not been refined.

Changes will be slighy different but not important if the organic light sugar is used instead of cristal sugar.

Grain size is regular.

This sugar is made in Central America.

Normally it is a « local » product that is often bought in third countries. It is sell as a « sugar bread » as per exemple in Ecuador or Bolivia for exemple. Most of people call it « Panella ».

In Brazil, we will find it with the name of « Mascovado ». The block form improves the stocking and preservation.

Its main feature is doughy form : there is not a cristallized form because of the high hygrometry contained (3% instead 1% for cristal sugar).

This feature represents a disadvantange to the industry because it is not free flowing. That is why its prefered use is to sweeten foods.

This sugar belongs also to the organic agriculture.

Its colour is over 2 800 ICUMSA.

It will bring a unique colour and taste to your food.
